Indian cuisine through a chef’s lens | Ingredient-driven tasting menu in Toronto

My story reflects many immigrants who arrive in Canada with limited resources but a determination to build something meaningful. I adapted quickly to life here, but I always wanted to share my heritage in a way that felt personal, intentional, and rooted in craft. Food became the medium for that expression.

Years spent cooking in European kitchens shaped how I think about ingredients, technique, and storytelling. It also made me realize that the version of Indian cuisine I wanted to create ingredient-led and thoughtful didn’t fully exist in Toronto.

That curiosity pushed me to show what Indian cuisine could look like through a chef’s lens, shaped by experience, guided by seasonality, and open to reinterpretation without losing its soul.

In 2020, the pandemic disrupted everything and forced clarity. It became the moment to bring this philosophy forward and build a dining experience grounded in story, technique, and a respect for ingredients, an ingredient-driven tasting menu that reflects who I am and how I see Indian cuisine.
